A kulfiwala parked on a bustling Indian street at dusk, the matka packed with ice as dense sticks of frozen cream are pulled free one by one. Kulfi Cart opens fragrant and sweet, green cardamom and saffron lifted by a drop of rosewater. The heart turns rich and creamy, slow-cooked malai and khoya folded with crushed pistachio. It settles warm and cozy, almond cream melting into vanilla bean and a soft musk, the kind of scent that feels like a childhood treat from the bazaar on a summer night, creamy and fragrant and impossibly indulgent.
